Hi Girls~
My favorite for freezing in big batches is this one...
16 ounces cooked penne
3 cans chunked chicken in water
1 can (12 ounces) artichokes
7 ounces pesto (I just use the fresh stuff that I make and freeze in ice cube trays over the summer- 3 cubes)
1 can roasted peppers in garlic
calamata olives to taste
4 cloves crushed garlic
salt to taste
pepper to taste
1 large can or two small cans of cream of chicken soup
1 cup parmesan cheese
Mix together and bake in a large glass casserole dish (10X14 AT LEAST) for 40 min on 350 degrees.
Eat right away or freeze.
We made two batches before Gretchen came and it got us through LOTS of meals. Serve it with some sliced tomatoes or cukes and it is a great dish. AND EASY.

| Oh.... and drain the artichokes, chicken, peppers etc.... before mixing. I should hvae included that. |
